Sunday

Got up early and made some oatmeal which made us warm and sleepy. Went back to bed and actually slept in until 12:30. I can't hardly remember when I've slept in that late.

Chris came over and helped move furniture around. We put the new tv on the coffee table and move it to the wall.

Tonight we went over to the folks for taco dinner. Very yummy.

Years ago, Walter Cronkite was known as the most trusted man in America.
But these days, when it comes to national newscasters, who do you trust most? Which ones are the most likely to give you the straight dope on what’s really going on in the world? Start thinking now, because that’s this week’s topic. And note that I’m specifying national (or network) newscasters so that everyone can immediately have an idea of who you’re talking about without getting lost in the list of local-only anchor/reporters.

THIS WEEK’S QUESTION:

Name seven of the living national (or network) anchors you trust the most.

1. Keith Olberman

2. Chris Matthews

3. Anderson Cooper

4. Jim Lehrer

5. Bob Schieffer

6. Mike Wallace

Saturday

Saturday Glitter Graphics
It is finally the weekend after a long and gruelling week. We are definitely going to watch Pirates 3 this weekend on the new tv. I will need to buy a new dvd player that will work with the new tv.

Photo Hunt's theme for this week is LONG. This was a tough one. I chose a picture that may gross some out or make you stare in wonder. I have to wonder how they ever type or pull a zipper up or open a car door with those long nails.

Friday

I woke up an hour early so I could finish the deviled eggs that I took for the potluck. During our team meeting we had our white elephant gift exchange. Kim ended up with the gift I brought and she was happy with it. I stole a candle set that Amanda had chosen. It was fun. Holly will be gone all next week on vacation. The systems went down about 10 minutes before I was ready to go home. Perfect timing I would say.

After work I went to Bed Bath & Beyond and picked up the Sliders Moving set to help with the furniture moving we are going to do this weekend. M hooked up the new tv and the picture is awesome!

Thursday

Foggy and icy this morning. Almost slipped on the deck. Went back inside and put on the snow boots and then trudged off to work.

After work I went to Circuit City and got the $162.00 off my credit card for the sale price. They still did not know how to give me the AAA 10% discount. So looks like I will have to make another trip down there for that when I can get them the information they need, some coupon or promo number. But it $50.00 so it is worth the effort. I also returned books to the library and went to Walmart for icemelt and dog treats.

Wednesday

I have learned that staying up until 10:00 at night and then getting up at 3:00 am to go to work makes you very tired by afternoon. They were asking everyone to work overtime, but I had the tv delivery coming right after work. I guess we could use the money, but I really wanted to get home.

Two really nice guys delivered the new television. We will need to rearrange the living room so it fits. We probably won't get it totally hooked up until Friday or even Saturday. M is working days for the next 2 days.

Tuesday

It felt almost like Spring today. The temperature sign on my way to work said 50 degrees and that was at 4:00 am.

Someone hit a power pole and knocked the power out at work. No systems. Tomorrow will probably be hell. All the calls we did not take today will call tomorrow.

After work I went to Comp USA and bought a LG 42" HD television. The resolution is fabulous. I cannot wait til it is set up in our living room upstairs. It will be delivered tomorrow afternoon. I am so excited. I also went to Circuit City and bought the Magellion GPS system I've been wanting. I also bought the Pirates of the Carribean movie that came out today. With the new tv coming we will need to move furniture and rearrange alot of stuff to make it fit just perfect.

Today is Secret Ingredient Tuesday #2. The ingredient for this week is RICE

Pineapple Rice

2 cups cooked rice

8 ounces diced ham

1 can crushed pineapple

3 green onions

1 carrot diced

2 Tbsp soy sauce

1/2 Cup frozen peas

2 Tbsp snipped chives

Salt and pepper to taste

Banana Rice Pudding

Ingredients:

3 cups skim milk 1 cup short-grain rice 3 banana -- mashed 1/2 teaspoon nutmeg 1 1/2 tablespoons brown sugar 1 teaspoon vanilla extract Instructions:
Preheat oven to 350 degrees.
Mix all ingredients well and pour into 1 1/2 quart casserole.
Bake for 1 to 1 1/2 hours, stirring occasionally, until rice is tender. Notes:Makes about 4 cups

Mexican Horchata

Serves: 6 - 7

I N G R E D I E N T S

6 tablespoons rice

6 ounces (about 1 1/4 cups) blanched almonds

1 inch cinnamon stick (canella)

3 "2-inch" strips of lime zest (rind only, not the white pithy part) 3/4" long

1 cup white granulated sugar

I N S T R U C T I O N S

The traditional way to make horchata is with a metate y mano. For those of us less adventurous, or simple those with less time, we can use a blender.
Pulverize the rice using a

metate y mano or your blender. Grind the mixture as smooth as possible. Combine the rice with the almonds, cinnamon and lime zest. Let this mixture stand overnight (minimally 6 hours).Place the mixture in the blender jar and blend for at least 3 - 5 minutes until the mixture is smooth and no long has a gritty texture. Add 2 cups of water and blend again for just a few seconds. Place a large sieve over a mixing bowl. Line the sieve with 3 layers of damp cheesecloth. Pour in the rice mixture, a little at a time and keep stirring to help the mixture go through the sieve. Once all the liquid has passed through to the bowl gather the cloth together at the top, give it a twist and squeeze out any additional liquid. Now add 2 more cups of water and stir in as much sugar as you'd like, to taste. If the mixture is too thick, add some additional water. Cover and refrigerate. The drink should keep several days, refrigerated. Serve in a tall glass over ice.

1/2 teaspoon pepper

PREPARATION:
Lightly grease a 2-quart casserole dish. Brown beef and onions in a large skillet over medium-high heat. When onions are translucent, add garlic and green pepper; cook until green pepper is softened.

CONFETTI RICE SALAD

Monday

The Pineapple Express is blowing its way through. It washed away all the snow and ice patches. It rained off and on all day. Tonight it is still raining and the wind is blowing hard.

Amanda brought in the poinsettias that I ordered. Took one over to M's mom when I got home. They are very healthy plants and pretty.

I am planning a very simple week's menu. Nothing very challening. I am trying to use alot out of the freezer.

Monday - Hamburgers and Curly Fries

Tuesday - Tacos

Wednesday - Chicken Stir Fry

Thursday - Chicken enchiladas

Friday - Breakfast

Saturday - Steak and baked potatoes and green salad

Sunday - Hot Dogs and macaroni salad

Of course any of this could change with an offer to go out or someone else to cook. LOL.

Sunday

Awoke to strong winds that was to bring in a chinook with warmer temps and rain to wash all the snow away. But that forecast went awry. I am looking out now at blowing wet snow. I am wishing I had stopped for gas yesterday.

We broke out the new coffee maker we bought last summer and found the box of Gevalia coffee and actually made a pot of coffee. I bought 2 kinds of flavored creamer: Chocolate Mint Truffel and Vanilla Spiced Rum. Yum-o!! It might save on the going to the coffee stand everytime the urge for coffee strikes.
I am now going to participate in Sunday Seven at Patrick's Place.

Today's question is: Name seven of your least favorite Christmas (or holiday-themed) songs.

Rules: Either answer the question in a comment or answer it in your journal and include the link in a comment. (To be considered “first to play,” a link must be to the specific entry in which you answered the question.) You may include this link in the URL space when leaving your comment, or in the comment itself. As long as it’s there in one spot or the other.

1. Alvin and the Chipmunk's Christmas Song

2. Grandma Got Run Over By A Reindeer

3. Christmas Shoes (I hate sappy, gimmicky type songs)

4. 12 Days of Christmas

5. Frosty The Snowman

6. My Favorite Things (Who ever decided this was a Xmas song?)

7. March of the Tin Soldiers (Or most of the music from the Nutcracker Suite)

Awoke to a very cold morning. It is around 14 degrees. More snow on its way for tonight.

M and I went for a late supper at Swinging Doors last night after he got off work.

The theme this week is: RED

I love this picture of all the candles. I look forward to seeing other "red" photos others have chosen this week.

It's Friday! Thank goodness. I was very happy to walk out of the office at 1:15. And won't have to return until Monday morning at 5:00. The snow has stopped. It sure is cold.

Feast One Hundred & Seventy

Appetiser

What is your favorite carnival/amusement park ride?

My favorite ride was the Scrambler. I don't care for rides that take you high in the air or drop you from high heights like roller coasters. My favorite ride at Disneyland, CA will always be Pirates of the Carribean. But for most rides in the amusement parks we have gone to I am the official family waiver & camera and stuff animal holder while the kids would ride all the rides.

Soup

How do you react in uncomfortable social situations?

I act different in different situations. Most times I talk too much. Fill in the quiet awkardness with too much chat. Other times I just recede and stay quiet, leave or avoid the situation entirely.

Salad

On a scale of 1-10 with 10 being highest, how much do you enjoy discussing deep, philosophical topics?

Probably an 8 or 9. I am not afraid to discuss politics or religion or any other type of intense topic. I am interested in what other people think. But I try to stay true to my beliefs and not let other people influence my thinking. I definitely can agree to disagree.

Main Course

Did you get a flu shot this year? If not, do you plan to?

I got the flu shot from the nurse at work and then a pnemonia shot from the doctor's office. Being diabetic I think its required. I hate being sick, so if this keeps the flu away, I am all for it!

Dessert

Approximately how many hours per week do you spend watching television?

Too much that is for sure. I watch from 21 hours to 40 hours a week. More in the winter because I don't venture out as much.

Thursday

Snowed overnight. The drive to work wasn't too bad. Work was normal. Lori came by on my lunch break and I gave her my Avon order. It was good seeing her.

When I left work the sun was out and snow had melted from the roadways. I stopped at Dutch Brothers for a mocha. Yum-orific!

Wednesday

Big snow coming! That is what they are warning us of. Oh Joy another wonderful drive to work. This morning and this afternoon wasn't so bad. Most of the roads were sprayed.
Where is the global warming everyone is squawking about? I want to email Al Gore and say What's Up? It is so dang cold....brrrr
After work I stopped at the library and returned books and picked up my books on hold. One is GPS for Dummies. I want to learn all I can before I get mine.
I also stopped and picked up a Papa Murphy's pizza. I did not feel like cooking or shopping. And M will have something fun to take for lunch tomorrow.
I watched Oprah! Incredible weight loss stories.

Tuesday

The snow finally came. We got about 4 inches. Driving to work wasn't too bad. only slid just a little in one place. Admin gave us hot chocolate and whipped cream to warm us up. It was as busy as it was yesterday. When I left work the snow was melting and most of the main streets have been sprayed. The side streets were still slippery. I decided to come straight home.

I have found something new to do on Tuesdays. Its called Secret Ingredient Tuesday. She names a secret ingredient and then you post 5 recipes using the ingredient.

Secret Ingredient #1 Sugar

Spiced Pecans

2 1/2 cups pecan halves
2 teaspoons vegetable oil
1 cup granulated sugar
1 teaspoon cinnamon
3/4 teaspoon salt
1/4 cup water
1 teaspoon vanilla extract

PREPARATION:
Put pecans and oil in a flat baking pan; stir until pecans are coated. Roast in 300° oven 20 to 25 minutes, stirring frequently. Cool.

Freak'n Good Ribs

INGREDIENTS
3 cups pineapple juice
1 1/2 cups brown sugar
1 1/2 tablespoons mustard powder
1/3 cup ketchup
1/3 cup red wine vinegar
1 1/2 tablespoons fresh lemon juice
2 tablespoons soy sauce
1/2 teaspoon ground cloves
2 teaspoons ground ginger
4 cloves garlic, minced
1/2 teaspoon cayenne pepper
2 pounds baby back pork ribs
1 (18 ounce) bottle barbeque sauce

DIRECTIONS
In a large baking dish, mix together the pineapple juice, brown sugar, mustard powder, ketchup, red wine vinegar, lemon juice, and soy sauce. Season with cloves, ginger, garlic, and cayenne pepper. Cut ribs into serving size pieces, and place into the marinade. Cover, and refrigerate, turning occasionally, for 8 hours or overnight.
Preheat oven to 275 degrees F (80 degrees C). Cook ribs in marinade for 1 1/2 hours, turning occasionally to ensure even cooking.
Preheat grill for medium heat.
Lightly oil grate. Grill ribs for 15 to 20 minutes, basting with barbecue sauce, and turning frequently until nicely glazed.

Sugared Grapes

15 min 15 min prep
green grapes
2
egg whites
1/2
cup
sugar (approx.)

For one regular size bunch of grapes, 2 egg whites.
Brush grapes with egg whites and then sprinkle sugar to TOTALY cover grapes.
Freeze until needed the day of.
This makes a very pretty garnish that's REALLY yummmy!
The crystallized sugar makes the grapes crunchy and sweet!

New Orleans Pralines

1- 1/2 cups sugar
3/4 cups light brown sugar, packed
1/2 cup + 2 T. Half and Half cream
1/2 stick butter
1 1/2 cups pecans
1 teaspoon vanilla

Combine all ingredients except the pecans and vanilla in a heavy saucepan

Mixture will be thick. Stir until it comes to a boil, then turn heat down to a low boil. Stir occasionally; spoon mixture up on sides of pan to melt any sugar that hasn't melted.

Cook until the mixture reaches 239 degrees with a candy thermometer. If you don't have a candy thermometer, bring it to the soft ball stage.
Remove from heat. Stir in the vanilla and the pecans. Stir until the mixture begins to thicken and becomes creamy and cloudy. Spoon onto waxed paper to harden

What usually happens is that by the time the mixture turns cloudy, signaling that it is time to drop onto the waxed paper, it starts hardening too fast to drop correctly. You should then stir in about 1 - 2 tablespoons of warm water to thin the mixture. Don't add too much - just enough to make the spoonfuls drop and settle in a "puddle". You don't want them to look like chunks of rocks.
If cooked to the correct temperature, it won't take a minute to harden by stirring. If you don't cook them long enough, they remain "sticky" and never become firm. They should be firm, yet creamy. If you don't eat them all the first day , wrap them individually and store them in an airtight container

Balsamic and Brown Sugar Glazed Beets

7 to 9 beets, peeled, quartered
1 1/2 cups water
3/4 cup brown sugar, packed
1/3 cup balsamic vinegar
2 tablespoons butter

Combine beets with water, brown sugar , vinegar, and butter. Bring to a boil. Reduce heat to medium and continue simmering, uncovered, for about 1 hour, or until beets are tender and most of the liquid has boiled away.Serves 4 to 6
